Abstract
This research establishes the development of enterprises dedicated to the production of rice through the adoption of the HACCP management system in order to improve and ensure the quality of these products and the processes involved in its making. This analysis is based on the principles and concepts of HACCP, quality management and the evaluation of key metrics of the sector in question. Currently, most of these farmers have a poor organizational structure along with a functional approach, which makes it difficult to achieve satisfactory levels of profitability as this diminishes the competitiveness of the organization in a market in which economies of scale are vital for sustainable growth. The results of the model will be corroborated through the variation of the principal quality and profitability metrics in a whole production cycle.
