Abstract
Quinoa, kañiwa and amaranth are very nutritious pseudocereals of Andean origin. Buckwheat is of Asian origin and has an interesting chemical composition. All these grains are excellent sources of dietary fibre. They contain several health-promoting bioactive compounds, such as flavonoids, phenolic acids and peptides. Taking into consideration their excellent nutritional value, they could be used in the food industry as ingredients for highly nutritious products.
