Abstract
An overview of the use of Andean crops, quinoa and Kañiwa, and their nutritional composition is presented. Both the crops served as a substitute for scarce animal proteins and contain a balanced composition of essential amino acids. The use of the crop grains as a potential raw material for oil extraction is also discussed.
