Abstract
Carbohydrates are the main chemical compounds in quinoa, kañiwa, amaranth and buckwheat kernels. The principal carbohydrate in all these grains is the starch. The starch of these pseudocereals has a very small granule size and this fact gives them many interesting techno-functional properties.
