Abstract
Projective Mapping or Napping coupled with ultra-flash profile are innovative sensory methods that are gaining popularity in sensory science as an alternative to conventional profiling to obtain a quick discrimination and characterization of food based on their (dis)similarities. This chapter addresses general aspects of Projective Mapping or Napping, including practical aspects and the pros and cons of the methodology. A case study with Vienna sausages is presented as an example of application in meat products.
